BBQ Grilled Halloumi & Veggie Skewers (Smoky & Satisfying)

These BBQ Grilled Halloumi & Veggie Skewers are a smoky, cheesy, and colorful addition to any cookout. With a mix of juicy vegetables and crispy golden halloumi, they’re the perfect vegetarian BBQ option — hearty, salty, and so satisfying.

Ingredients:

  • 200g halloumi cheese (cut into cubes)
  • 1 zucchini (sliced into thick rounds)
  • 1 red bell pepper (cut into squares)
  • 1 red onion (cut into wedges)
  • 6–8 cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt & black pepper to taste
  • Skewers (if wooden — soak for 30 min)

Instructions:

  1. In a large bowl, gently toss halloumi and veggies with olive oil, lemon juice, oregano, salt, and pepper.
  2. Thread onto skewers, alternating cheese and vegetables.
  3. Preheat grill or BBQ to medium-high heat.
  4. Grill skewers for 8–10 minutes, turning occasionally, until halloumi is golden and veggies are slightly charred.
  5. Serve warm with tzatziki, hummus, or flatbread.
