Sticky BBQ Duck Legs with Charred Pineapple

Duck on the BBQ? Absolutely — especially when paired with a sticky, caramelized glaze and chargrilled pineapple. The rich, crispy skin of the duck contrasts beautifully with the sweet fruit and smoky char. A bit of a showstopper!

Ingredients:

  • 2 duck legs (skin on)
  • Salt & pepper
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp hoisin sauce
  • 1 tsp rice vinegar
  • ½ tsp five-spice powder
  • Pineapple slices (fresh or canned)

Instructions:

  1. Score duck skin and season with salt and pepper.
  2. Mix soy, honey, hoisin, vinegar, and five-spice into a glaze.
  3. Brush glaze on duck and marinate for 30 min.
  4. Grill duck legs skin-side down over medium heat for ~10 min.
  5. Flip, baste again, and grill until cooked through (~10–15 min more).
  6. Grill pineapple slices briefly until charred.
  7. Serve with extra glaze and herbs.
