Duck on the BBQ? Absolutely — especially when paired with a sticky, caramelized glaze and chargrilled pineapple. The rich, crispy skin of the duck contrasts beautifully with the sweet fruit and smoky char. A bit of a showstopper!
Ingredients:
- 2 duck legs (skin on)
- Salt & pepper
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp hoisin sauce
- 1 tsp rice vinegar
- ½ tsp five-spice powder
- Pineapple slices (fresh or canned)
Instructions:
- Score duck skin and season with salt and pepper.
- Mix soy, honey, hoisin, vinegar, and five-spice into a glaze.
- Brush glaze on duck and marinate for 30 min.
- Grill duck legs skin-side down over medium heat for ~10 min.
- Flip, baste again, and grill until cooked through (~10–15 min more).
- Grill pineapple slices briefly until charred.
- Serve with extra glaze and herbs.
