These BBQ Grilled Halloumi & Veggie Skewers are a smoky, cheesy, and colorful addition to any cookout. With a mix of juicy vegetables and crispy golden halloumi, they’re the perfect vegetarian BBQ option — hearty, salty, and so satisfying.
Ingredients:
- 200g halloumi cheese (cut into cubes)
- 1 zucchini (sliced into thick rounds)
- 1 red bell pepper (cut into squares)
- 1 red onion (cut into wedges)
- 6–8 cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt & black pepper to taste
- Skewers (if wooden — soak for 30 min)
Instructions:
- In a large bowl, gently toss halloumi and veggies with olive oil, lemon juice, oregano, salt, and pepper.
- Thread onto skewers, alternating cheese and vegetables.
- Preheat grill or BBQ to medium-high heat.
- Grill skewers for 8–10 minutes, turning occasionally, until halloumi is golden and veggies are slightly charred.
- Serve warm with tzatziki, hummus, or flatbread.
