These BBQ Grilled Pineapple Chicken Thighs are juicy, sticky, and full of tropical flavor. The sweet pineapple pairs perfectly with smoky grilled chicken — a summer BBQ hit!
Ingredients:
- 6 boneless, skinless chicken thighs
- ½ cup pineapple juice
- ¼ cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp ketchup
- 1 tbsp olive oil
- 1 garlic clove (minced)
- 1 tsp grated fresh ginger
- Pinch of chili flakes (optional)
- Salt & pepper to taste
- Pineapple slices for grilling (optional)
Instructions:
- In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, oil, garlic, ginger, and chili flakes.
- Add chicken and marinate for at least 1 hour (or overnight).
- Preheat grill or BBQ to medium-high heat.
- Grill chicken thighs 5–7 minutes per side, basting with marinade, until cooked through and caramelized.
- Optionally, grill pineapple slices 1–2 minutes per side until charred.
- Serve chicken with grilled pineapple and fresh herbs.
