This BBQ grilled flatbread is smoky, crispy, and topped with creamy ricotta, charred zucchini ribbons, and a drizzle of honey.
Ingredients:
- 2 pieces of flatbread or naan
- ½ cup ricotta cheese
- 1 zucchini (sliced thinly with a peeler)
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1 tsp fresh thyme (or dried)
- Salt & black pepper
- Honey (for drizzling)
- Optional: chili flakes or crushed pistachios
Instructions:
- Brush zucchini ribbons with olive oil and season lightly.
- Grill zucchini 1–2 mins per side until lightly charred. Set aside.
- Lightly grill flatbread on both sides until warm and slightly crisp.
- Spread ricotta evenly over grilled bread. Top with zucchini ribbons.
- Sprinkle with lemon zest, thyme, salt, pepper, and drizzle with honey.
- Serve immediately, optionally topped with chili flakes or nuts.
