Corn ribs are the fun, flavour-packed twist your next BBQ needs. These BBQ Corn Ribs are sweet, smoky, a little spicy — and incredibly addictive. Cut into curved strips, grilled until slightly charred, and finished with a chili-lime butter, they’re a modern Aussie favourite.
Perfect as a side dish, snack, or vegetarian option for grilling season.
Ingredients:
- 2 fresh corn cobs, husked
- 1 tablespoon olive oil
- Salt & pepper
Chili-lime butter:
- 2 tablespoons softened butter (or vegan alt.)
- ½ teaspoon chili flakes
- Zest of 1 lime
- Juice of ½ lime
- Pinch of smoked paprika
- Salt, to taste
Instructions:
- Carefully cut each corn cob lengthwise into quarters (you’ll get long rib-style wedges).
- Toss corn ribs with olive oil, salt, and pepper.
- Grill over medium heat for 8–10 minutes, turning occasionally, until lightly charred and curled.
- Meanwhile, mix all chili-lime butter ingredients in a bowl.
- Brush hot corn with chili-lime butter just before serving.
- Serve with extra lime wedges and fresh coriander if desired.
