Ingredients:
For the steak:
- 2 beef steaks (ribeye, sirloin, or scotch fillet — about 250–300g each)
- Olive oil
- Salt and freshly ground black pepper
For the garlic herb butter:
- 50g unsalted butter, softened
- 1 garlic clove, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh rosemary or thyme, chopped
- Pinch of salt
Instructions:
- Make the garlic butter: In a small bowl, mix softened butter with garlic, herbs, and a pinch of salt. Transfer to baking paper, roll into a log, and refrigerate until firm.
- Prep the steaks: Bring steaks to room temperature. Rub with olive oil, salt, and pepper on both sides.
- Grill: Heat BBQ grill or griddle to high heat. Cook steaks for 3–4 minutes per side (medium-rare), or to desired doneness. Use a meat thermometer if needed (55–60°C for medium-rare).
- Rest: Transfer steaks to a plate, top with a slice of garlic butter, and cover loosely with foil. Let rest for 5 minutes before serving.
