Creamy Chicken and Mushroom Pasta Bake

Rich, creamy, and incredibly satisfying — this Chicken and Mushroom Pasta Bake is the perfect comfort food for cooler evenings or cosy weekends. Tender chicken, earthy mushrooms, and pasta are folded into a creamy sauce, then baked with golden cheese on top. Pure comfort in every bite.

It’s also ideal for prepping ahead and feeding the whole family.

Ingredients:

  • 300g pasta (penne or fusilli)
  • 2 chicken thighs or breasts, diced
  • 200g mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1½ cups milk
  • ½ cup cream (optional)
  • 1 cup grated cheese (cheddar or tasty)
  • Salt, pepper, dried thyme

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Cook pasta until just al dente. Drain and set aside.
  3. In a pan, cook onion and garlic in butter. Add chicken and cook until browned. Add mushrooms and thyme, cook until tender.
  4. Stir in flour, cook 1 min. Gradually add milk and cream. Stir until thickened.
  5. Combine sauce with pasta, season to taste. Transfer to baking dish.
