Golden, crunchy, and lightly sweet — these Crispy Coconut Shrimp are a tropical-inspired dish that feels fancy but takes just minutes in the air fryer. The shredded coconut coating gives each bite an irresistible texture, while the inside stays juicy and tender.
Serve them as a starter, party bite, or easy weeknight meal.
Ingredients:
- 300g raw shrimp, peeled and deveined
- ¼ cup flour
- 1 egg, beaten
- ½ cup shredded coconut (unsweetened)
- ¼ cup breadcrumbs
- Salt & pepper
- Optional: sweet chili sauce or lime wedges to serve
Instructions:
- Pat shrimp dry. Season with salt and pepper.
- Set up three bowls: flour, egg, and coconut + breadcrumbs mix.
- Dip each shrimp in flour, then egg, then coat in coconut mixture.
- Place shrimp in air fryer basket. Lightly spray with oil.
- Cook at 200°C (390°F) for 7–9 minutes, flipping halfway, until golden.
- Serve with your favourite dipping sauce.
