These Air Fryer Stuffed Bell Peppers are a wholesome and cozy meal option that’s ready in half the time of oven baking. Packed with savory rice, veggies, and melted cheese — they’re perfect for dinner or meal prep.
Ingredients:
- 3 large bell peppers (any color), halved and seeded
- 1 cup cooked rice
- ½ cup canned black beans (rinsed)
- ½ cup corn kernels
- ½ cup diced tomatoes
- 1 tsp smoked paprika
- ½ tsp cumin
- Salt & pepper to taste
- ½ cup shredded cheese (cheddar or mozzarella)
- Olive oil spray
Instructions:
- Preheat air fryer to 180°C (355°F).
- In a bowl, mix rice, beans, corn, tomatoes, and spices.
- Spoon the mixture into the pepper halves and top with shredded cheese.
- Lightly spray the air fryer basket and place the peppers inside.
- Air fry for 10–12 minutes until the peppers are tender and the cheese is bubbly.
