Hearty, wholesome, and plant-based — this Lentil & Sweet Potato Stew is a nourishing one-pot recipe perfect for cosy nights or meal prep. With earthy lentils, creamy sweet potato, and warm spices, it’s satisfying without being heavy.
It’s rich in fibre, protein, and flavour — a great vegan alternative to traditional stews.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 medium sweet potato, peeled and cubed
- 1 carrot, chopped
- ¾ cup dried red lentils, rinsed
- 1 can diced tomatoes
- 3 cups vegetable stock
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley to serve
Instructions:
- Heat olive oil in a pot. Sauté onion and garlic until soft.
- Add sweet potato, carrot, and spices. Stir for 2–3 minutes.
- Add lentils, tomatoes, and stock. Bring to boil, then reduce to simmer.
- Cook uncovered for 25–30 minutes, stirring occasionally, until lentils are tender.
- Season to taste and garnish with parsley. Serve warm.
