Blended until silky smooth, the soup is optionally enriched with a splash of cream for extra richness. And of course, it’s best served with crunchy, golden toasted garlic bread — the ultimate companion for dipping and scooping.

Ingredients:

  • 1 kg pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves
  • 3 cups vegetable stock
  • 1 tbsp olive oil
  • Salt & pepper
  • Optional: cream

Instructions:

  1. Sauté onion and garlic in olive oil until soft.
  2. Add pumpkin and stock. Bring to boil, then simmer ~20 minutes.
  3. Blend until smooth. Add salt, pepper, and cream if desired.
  4. Serve with toasted garlic bread.
