Ingredients:
- 2 large eggs
- 1 tablespoon milk
- Salt and pepper
- 1 teaspoon olive oil or butter
- 1 small avocado, sliced
- 2 tablespoons tomato salsa
- 1 small flour tortilla (or wrap)
- Optional: grated cheddar, black beans, baby spinach, or hot sauce
Instructions:
- In a bowl, whisk eggs with milk, salt and pepper.
- Heat oil or butter in a nonstick pan. Add eggs and scramble until just set.
- Warm tortilla briefly on a pan or microwave.
