Ingredients:
- 1 large cucumber, thinly sliced (use mandoline or diagonally)
- 1 tablespoon rice vinegar
- Juice of ½ lime
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- ½ teaspoon honey or maple syrup
- 1 teaspoon toasted sesame seeds
- Optional: chili flakes or fresh coriander
