Fresh, fast, and full of vibrant flavours — this Mediterranean Chickpea Salad is a perfect meal when you want something light, healthy, and ready in minutes. Packed with plant-based protein, crunchy vegetables, and a tangy lemon-olive oil dressing, it’s ideal for lunch, a side dish, or a meatless dinner.

No cooking required. Just chop, toss, and serve. This salad is naturally gluten-free, vegan, and perfect for meal prep or picnics.

If you’re looking for a quick and fresh salad recipe that’s as nutritious as it is delicious, this one’s for you.

Ingredients:

  • 1 can chickpeas (400g), drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, finely sliced
  • ¼ cup Kalamata olives, pitted and sliced
  • ¼ cup crumbled feta (optional)
  • 2 tablespoons chopped parsley or mint

For the dressing:

  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions:

  1. In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, olives, and herbs.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Add crumbled feta (if using) and serve immediately or refrigerate for up to 2 days.
