Ingredients:
- 1 can tuna in springwater or olive oil (approx. 185g), drained
- 1 small carrot, grated
- ½ cucumber, finely diced
- 2 tablespoons red onion, finely chopped
- 1 tablespoon capers or pickles (optional)
- 6–8 large lettuce leaves (cos or iceberg work best)
For the dressing:
- 3 tablespoons Greek yogurt
- 1 teaspoon Dijon mustard
- Juice of ½ lemon
- Salt and black pepper to taste
Instructions:
- In a bowl, mix the tuna, grated carrot, cucumber, onion, and capers.
- In a small bowl, whisk together yogurt, mustard, lemon juice, salt, and pepper until smooth.
- Add the dressing to the tuna mixture and stir to combine.
