These Air Fryer Egg & Veggie Cups are a protein-packed, low-carb breakfast you can prep in minutes. Made with eggs, fresh vegetables, and cheese, they’re like mini frittatas — light, fluffy, and golden.

Ingredients:
- 4 eggs
- ¼ cup diced bell pepper
- ¼ cup chopped spinach
- 2 tablespoons grated cheese
- Salt & pepper to taste
- Olive oil spray
Instructions:
- Preheat air fryer to 180°C (355°F).
- In a bowl, whisk eggs and stir in veggies, cheese, salt & pepper.
- Grease silicone muffin cups or ramekins with oil spray.
- Pour mixture into cups (¾ full) and place in air fryer basket.
- Cook for 10–12 minutes or until set and golden.
- Cool slightly and enjoy warm or cold.
