Ingredients:
- 1 small eggplant (aubergine), thinly sliced
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
Instructions:
- Preheat the air fryer to 180°C (350°F).
- Slice the eggplant into thin, even rounds (use a mandoline if possible).
- In a bowl, toss slices with olive oil and seasoning until well coated.
- Place eggplant slices in the air fryer basket in a single layer (cook in batches if needed).
- Air fry for 10–12 minutes, flipping halfway through, until golden and crispy.
- Let cool slightly — they’ll crisp up more as they cool. Serve immediately or store in an airtight container.
