Soft, pillowy gnocchi baked in a rich tomato sauce with spinach and melted cheese — this Cheesy Baked Gnocchi is comfort food at its finest. It’s a one-dish wonder that’s easy to prepare, crowd-pleasing, and perfect for weeknights.
Minimal prep, maximum flavour — just layer and bake!
Ingredients:
- 500g store-bought potato gnocchi
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 2 cups baby spinach
- 1 jar (500g) tomato pasta sauce
- 1 cup shredded mozzarella
- ¼ cup grated parmesan
- Salt, pepper, and chili flakes to taste
Instructions:
- Preheat oven to 200°C (390°F).
- In a pan, heat oil and sauté garlic. Add spinach until wilted.
- Stir in tomato sauce and season to taste.
- Add uncooked gnocchi to the sauce and toss to coat.
- Transfer to a baking dish. Top with mozzarella and parmesan.
- Bake uncovered for 20–25 minutes until golden and bubbling.
