This Sweet and Spicy Chicken Stir-Fry is the perfect dinner solution for busy nights. Juicy chicken pieces are cooked with colourful vegetables and tossed in a glossy, flavour-packed sauce that’s both sweet and spicy. Served over rice or noodles, it’s a fast, family-friendly favourite.
Ready in under 25 minutes and easily customisable with your choice of veg.
Ingredients:
- 2 chicken thighs or breasts, sliced
- 1 red capsicum, sliced
- 1 carrot, julienned
- 1 small broccoli head, cut into florets
- 2 garlic cloves, minced
- 1 tablespoon oil
Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon honey or brown sugar
- 1 teaspoon chili sauce or flakes
- 1 tablespoon rice vinegar
- ½ teaspoon sesame oil
- 1 teaspoon cornflour + 2 tsp water (optional, for thickening)
Instructions:
- Heat oil in a large pan or wok. Cook chicken until browned and cooked through. Remove and set aside.
- Stir-fry vegetables for 3–4 minutes until just tender.
- Add garlic, cook 30 seconds. Return chicken to pan.
- Add sauce ingredients. Stir well.
- Simmer 2–3 minutes until glossy. Add slurry if you prefer a thicker glaze.
- Serve hot over rice or noodles.
