Anzac Biscuits are a beloved classic in Australia and New Zealand—crunchy on the outside, chewy in the centre, and rich with the flavours of oats, coconut, and golden syrup. Originally baked to send to soldiers during World War I, these iconic biscuits remain a timeless homemade treat.
Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 cup desiccated coconut
- ¾ cup brown sugar
- 125g unsalted butter
- 2 tbsp golden syrup
- ½ tsp baking soda
- 2 tbsp boiling water
Instructions:
- Preheat oven to 160°C (320°F). Line a baking tray with parchment paper.
- In a bowl, mix oats, flour, coconut, and brown sugar.
- In a saucepan, melt butter and golden syrup over low heat.
- In a small bowl, mix baking soda with boiling water, then stir into the butter mixture.
- Pour the wet mixture into the dry and mix well.
- Roll into small balls, place on tray, and flatten slightly.
- Bake for 12–15 minutes until golden. Cool on tray.
