Crispy on the outside, soft and fluffy inside—these Aussie-style Corn Fritters are a popular breakfast and brunch item served in cafés across Australia. They’re savoury, lightly spiced, and pair perfectly with avocado, poached eggs, or tomato relish.
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 large eggs
- ½ cup milk
- 1 ½ cups corn kernels (fresh, canned or frozen)
- ½ red capsicum (bell pepper), finely diced
- 2 spring onions, chopped
- ½ tsp smoked paprika
- Salt & pepper to taste
- Olive oil, for frying
Instructions:
- In a large bowl, whisk together flour, baking powder, eggs, and milk to form a smooth batter.
- Stir in corn, capsicum, spring onion, paprika, salt, and pepper.
- Heat oil in a non-stick skillet over medium heat.
- Drop spoonfuls of batter and cook 2–3 minutes per side until golden and cooked through.
- Drain on paper towels. Serve hot with avocado or relish.
