Lamingtons are one of Australia’s most iconic sweet treats—sponge cake squares dipped in rich chocolate icing and rolled in desiccated coconut. Soft, moist, and with a hint of nostalgia, they’re perfect for afternoon tea or celebrations.
Ingredients:
For the sponge:
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ cup unsalted butter (softened)
- ½ cup caster sugar
- 2 large eggs
- ¼ cup milk
- 1 tsp vanilla extract
For the coating:
- 2 cups icing sugar
- ⅓ cup cocoa powder
- ½ cup milk
- 2 tbsp butter
- 2 cups desiccated coconut
Instructions:
- Preheat oven to 180°C (355°F). Grease and line a square baking pan.
- Cream butter and sugar, then add eggs, one at a time. Stir in vanilla.
- Add sifted flour and baking powder, alternating with milk. Mix to a smooth batter.
- Bake for 25–30 mins. Let cool completely, then cut into squares.
- For the icing: combine icing sugar, cocoa, milk, and butter in a saucepan over low heat. Stir until smooth.
- Dip each sponge square into the chocolate icing, then roll in coconut.
- Let set on a wire rack
