Ingredients:
- 2 slices sourdough bread
- 1 ripe avocado
- 2 eggs
- 1 tsp white vinegar
- Salt & pepper
- Optional: chili flakes, lemon juice
Instructions:
- Toast the sourdough slices until golden.
- Mash the avocado with salt, pepper, and a squeeze of lemon.
- Bring water to a gentle simmer in a saucepan, add vinegar.
- Crack egg into a cup, then gently slide it into water. Poach for ~3 mins.
- Spread avocado on toast, top with poached egg. Sprinkle with chili flakes.
