Halloumi & Spinach Wraps are a warm, savoury, protein-packed brunch option that’s quick to make and loaded with flavour. The crispy grilled halloumi pairs perfectly with tender spinach and a creamy yogurt sauce — all wrapped in a soft tortilla.
Ingredients:
- 1 large tortilla wrap
- 3–4 slices halloumi cheese
- 1 cup baby spinach
- 1 tablespoon olive oil
- 2 tablespoons Greek yogurt
- ½ teaspoon lemon juice
- Pinch of smoked paprika
- Salt & pepper to taste
Instructions:
- Heat olive oil in a skillet and grill halloumi until golden on both sides.
- Wilt spinach in the same pan (1–2 mins).
- In a small bowl, mix yogurt, lemon juice, paprika, salt & pepper.
- Warm the wrap, then layer spinach, halloumi, and drizzle with yogurt sauce.
- Fold and toast briefly if desired. Serve warm.
