Fluffy, creamy, and slightly tangy — Ricotta Pancakes are a delicious twist on the traditional stack. These are perfect for a slow weekend brunch, especially when topped with fresh berries and a drizzle of maple syrup.
Ingredients:
- 1 cup ricotta cheese
- ¾ cup milk
- 2 eggs, separated
- ¾ cup plain flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- Pinch of salt
- Butter or oil for cooking
- To serve: fresh berries, maple syrup, powdered sugar
Instructions:
- In a bowl, whisk ricotta, milk, and egg yolks.
- In a separate bowl, mix flour, baking powder, sugar, and salt. Add to wet mixture.
- Beat egg whites until soft peaks form, then fold gently into batter.
- Heat pan with butter/oil. Spoon in batter and cook 2–3 mins each side until golden.
- Serve with berries, maple syrup, and a dusting of icing sugar.
