This Savory Breakfast Burrito is your go-to morning fuel—warm tortilla packed with scrambled eggs, crispy bacon, cheese, and fresh veggies. It’s easy to make, perfect for on-the-go mornings, and also freezer-friendly for meal prep.
Ingredients:
- 2 large flour tortillas
- 4 eggs
- 4 slices of bacon (or vegetarian alternative)
- ½ cup shredded cheddar cheese
- ½ avocado, sliced
- ¼ cup diced tomato
- 2 tbsp chopped fresh coriander
- Salt & pepper to taste
- Olive oil or butter, for cooking
Instructions:
- Cook bacon in a skillet until crispy. Set aside.
- In the same pan, scramble the eggs with a little oil or butter. Season with salt and pepper.
- Warm tortillas slightly to soften.
- Layer eggs, bacon, cheese, tomato, avocado, and coriander onto each tortilla.
- Roll into a burrito shape—fold in sides, then roll tightly from bottom up.
