Ingredients:
- 6 eggs
- ½ cup milk
- 1 cup shredded cheddar cheese
- ½ cup chopped spinach
- ½ red capsicum, diced
- ¼ cup chopped spring onions
- Salt & pepper to taste
- Optional: cooked bacon or feta
Instructions:
- Preheat oven to 180°C (355°F) and grease a muffin tin.
- In a large bowl, whisk together eggs and milk.
- Stir in cheese, veggies, and seasonings.
- Pour mixture into muffin tins, filling about ¾ full.
- Bake for 18–20 minutes or until set and golden.
- Cool slightly before removing. Serve warm or store for meal prep.
