Shakshuka is a vibrant North African and Middle Eastern dish made with poached eggs in a spicy tomato and pepper sauce. This café-style version adds creamy feta cheese and a sprinkle of herbs — ideal for a cozy brunch or weekend breakfast.
Ingredients:
- 1 tablespoon olive oil
- 1 small onion, sliced
- 1 red bell pepper, sliced
- 2 garlic cloves, minced
- 400g canned crushed tomatoes
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- Salt & pepper to taste
- 3–4 eggs
- ¼ cup crumbled feta
- Fresh parsley or cilantro to garnish
Instructions:
- Heat olive oil in a skillet. Sauté onion, pepper, and garlic until soft.
- Add tomatoes, spices, salt & pepper. Simmer 10 minutes until thickened.
- Make small wells in the sauce and crack in eggs.
- Cover and cook until eggs are just set (5–7 mins).
- Top with feta and fresh herbs. Serve with warm bread.
