This Spinach & Feta Omelette is a classic, light yet satisfying breakfast that comes together in minutes. Packed with protein, leafy greens, and salty feta—perfect for busy mornings or weekend brunch.
Ingredients:
- 2–3 large eggs
- 1 tbsp milk (optional, for fluffier texture)
- ½ cup fresh spinach, chopped
- 2 tbsp crumbled feta cheese
- 1 tbsp butter or olive oil
- Salt & pepper to taste
- Optional: cherry tomatoes, green onion, chili flakes
Instructions:
- Crack eggs into a bowl, add milk (if using), salt, and pepper. Whisk until smooth.
- Heat butter or oil in a non-stick pan over medium heat.
- Pour in eggs and swirl to coat the pan evenly.
- Cook undisturbed for 1–2 minutes, then sprinkle spinach and feta over one half.
- Fold the omelette gently and cook 1 more minute.
- Slide onto a plate and serve with toast or salad.
