Elegant, light, and irresistibly sweet — Pavlova with Fresh Berries is a classic dessert that never fails to impress. Named after the famous ballerina Anna Pavlova, this airy meringue-based treat is crisp on the outside, marshmallow-soft on the inside, and topped with whipped cream and seasonal berries for a fresh, vibrant finish.

Perfect for holidays, celebrations, or summer gatherings, Pavlova is naturally gluten-free and looks stunning as a table centerpiece. The combination of tart berries and rich cream balances the sweet meringue for a dessert that’s as well-balanced as it is beautiful.

This recipe is beginner-friendly and a wonderful choice for those wanting to master a classic Australian and New Zealand dessert.

Ingredients:

  • 4 egg whites
  • 1 cup caster sugar
  • 1 tsp vinegar
  • 1 tsp cornstarch
  • 300ml whipping cream
  • Mixed fresh berries

Instructions:

  1. Preheat your oven to 120°C (250°F).
  2. In a clean bowl, beat egg whites until stiff peaks form. Gradually add sugar while continuing to beat until the mixture is glossy and holds firm peaks.
  3. Gently fold in vinegar and cornstarch.
  4. Spoon the mixture onto a parchment-lined baking tray and shape into a round disk with a slight well in the center.
  5. Bake for 1 hour. Turn off the oven and let it cool completely inside with the door slightly ajar.
  6. Top with freshly whipped cream and scatter with mixed berries just before serving.

🍓 Serving tip: Use a mix of strawberries, blueberries, raspberries, and kiwi for a colorful, tangy finish.
